Alexandru Dumitru is known for the use of local, seasonal ingredients, and has created a menu that impresses with subtlety. The nettle dumplings are full of bold flavours, the free-range chicken, served with spaetzle, Swiss chard, kohlrabi and a twist of pickled onions takes you straight to the country side, and the sponge cake with elderflower syrup and tangy borș (fermented wheat bran juice) ice cream is a convincing and memorable example of the New Romanian Cuisine.
