The Gault&Millau 2019 Award | Regional Chefs of the Year| Transilvania was won by Roland SZEGEDI, from Cabinet de Vin & Cocotte Chef: Roland SZEGEDI Creative and refined, Cabinet de Vin & Cocotte plays on the history of the building – it used to be a pharmacy –, not only by keeping the old medicine cabinets, contrasted by a row of white wooden mannequin hands, but also the inclination for experiments. The menu is short and exciting, with all dishes served in classic cast iron cocottes, harmoniously combining interesting flavors: pork with tapioca, apples and rosemary honey, sweet potato filled pastry with sundried tomatoes and pistachios, Burgundy snails with grilled leeks, and a chocolate sponge cake filled with mint paste and topped with a coconut panna cotta. Wine plays a significant role, with an eclectic selection that will meet any doctor’s orders.
