Cluj has been growing into a culinary destination for years now, and Fragment is a true exponent of this movement. Benefiting of a rich background – including a training in Denmark, at Relæ –, Andrei Chelaru and his team contribute to the emerging New Romanian Cuisine. Consistent with the promise of a cutting-edge experience, the menu expresses traditional ideas in a contemporary style, using seasonal, local produce, and recurring motif-ingredients such as borș (fermented wheat bran juice). The duck breast with beetroot and raspberry sauce is enough of an argument. The meat, cooked sous-vide, is perfectly pink, and the beetroot takes three forms – including powdered. Or, how about a spinach tart for dessert, if we need to say more.
