The energy is tangible at KAIAMO: waiters buzzing in the raw setting of concrete, wood and metal, open kitchen, and guests swooning over intricate plates – or is that an edible cotton plant in a vase? Radu CM Ionescu, trained at the Cordon Bleu in London, is quite an experimentalist, twisting local ideas and ingredients in contemporary fashion. Some results are spectacular: the L’escargot vert, which transports you directly to a garden, the Saint-Jacques scallops with sweetbreads, mushrooms, and a black lemon sauce, or the trompe l’oeil desserts – Sushi Beet is just as intriguing as it sounds. Remember, this is a creative laboratory and enjoy it, for it’s one of the places where the New Romanian Cuisine is being born.
