The menu is extensive but well-balanced, offering both classical dishes and some rare birds such as goat meat or game. The cocoa pappardelle with Saint Jacques scallops and a pumpkin emulsion offer an unexpected yet harmonious combination, to be followed by a sweet treat that is the Schönbrunn chocolate soufflé, fluffy on the outside and creamy on the inside, complemented by a delicate zabaglione cream.
