The governing principle at Syndicat Gourmet is a local action regarding ingredients and an unbiased openness towards other cuisines. Thus, the menu is based on seasonality and proposes, on the one hand, a reinterpretation of the Transylvanian cuisine and, on the other, an Indian fusion. A traditional starter is the preserved lamb with quince and chili jelly and pickled grapes, with every taste perfectly individualized. Seasonality is reflected by the coarse corn flour risotto – with wild or brown mushrooms and smoked sausages or sheep's tongue. Regardless of the recipe, expect a harmonious dish. As for desserts, the apple tart is saved from obsoleteness through the addition of sea-buckthorn ice cream.
