The Gault&Millau 2019 Award | Chef of the Year was won by Alexandru DUMITRU, from Bistro Ateneu Chef: Alexandru DUMITRU In a culinary scene often ruled by form rather than substance, Bistro Ateneu sets an example for value gained through experience and honesty. Alexandru Dumitru is known for the use of local, seasonal ingredients, and has created a menu that impresses with subtlety. The nettle dumplings are full of bold flavours, the free-range chicken, served with spaetzle, Swiss chard, kohlrabi and a twist of pickled onions takes you straight to the country side, and the sponge cake with elderflower syrup and tangy borș (fermented wheat bran juice) ice cream is a convincing and memorable example of the New Romanian Cuisine. The menu changes regularly, each dish reflecting the chef’s vision – Roland Suciu has an engineering background, which only begins to explain his preciseness and search for perfect balance. Tuna with shallot puree and black lentils or the foie gras with pear puree and pain d’épices are only some of the dishes that will please the eye and awake your taste buds. A more recent addition is the tasting menu, focused on local ingredients and overtly creative. The Gault&Millau 2019 Award | Great Chefs of Tomorrow was won by Andrei CHELARU, from Fragment Chef: Andrei CHELARU Cluj has been growing into a culinary destination for years now, and Fragment is a true exponent of this movement. Benefiting of a rich background – including a training in Denmark, at Relæ –, Andrei Chelaru and his team contribute to the emerging New Romanian Cuisine. Consistent with the promise of a cutting-edge experience, the menu expresses traditional ideas in a contemporary style, using seasonal, local produce, and recurring motif-ingredients such as borș (fermented wheat bran juice). The duck breast with beetroot and raspberry sauce is enough of an argument. The meat, cooked sous-vide, is perfectly pink, and the beetroot takes three forms – including powdered. The Gault&Millau 2019 Award | Great Chefs of Tomorrow was won by Radu CM IONESCU, from KAIAMO Chef: Radu Constantin Mihai IONESCU The energy is tangible at KAIAMO: waiters buzzing in the raw setting of concrete, wood and metal, open kitchen, and guests swooning over intricate plates – or is that an edible cotton plant in a vase? Radu CM Ionescu, trained at the Cordon Bleu in London, is quite an experimentalist, twisting local ideas and ingredients in contemporary fashion. Some results are spectacular: the L’escargot vert, which transports you directly to a garden, the Saint-Jacques scallops with sweetbreads, mushrooms, and a black lemon sauce, or the trompe l’oeil desserts – Sushi Beet is just as intriguing as it sounds. Each room is custom decorated, respecting the French elegance codes. The imposing bar at the entrance, antique furniture and paintings, small table lamps, discreet but warm service create a welcoming bourgeois atmosphere. The menu is just as impressive, featuring high quality ingredients – lobster from Brittany, organic Scottish salmon, Wagyu beef. The Corrèze veal with morel mushrooms, asparagus and a white wine sauce is tender and perfectly balanced. Make sure you also try the Perfect egg with Transylvanian truffle, foie gras, Comté and brioche. The more than 700 wines, mostly French, will match any choice, just ask the knowledgeable sommelier.
